Banana Nut Flapjack

Ingredients: Serves 12.

Methods

  • 2 over-ripe black bananas
  • 250g rolled oats
  • ½ cup crunchy peanut butter
  • ¼ cup honey
  • 3 Tbsp coconut oil
  • ¼ cup (45g) whole raw peanuts
  1. Preheat oven to 180 degrees Celsius.
  2. Melt honey and coconut oil together in the microwave or in a small saucepan until runny then stir in the peanut butter. .
  3. Mush all the bananas with a fork.
  4. Add oats, banana, wet ingredients and mix together well.
  5. Line a square 20cm baking tin with baking paper.
  6. Press mixture into the lined tin and bake in the oven for 20 minutes until cooked through and golden.
  7. Cool, cut into squares or bars and store in an airtight container.
  8. Use within one week of baking.
