Methods
- 2 over-ripe black bananas
- 250g rolled oats
- ½ cup crunchy peanut butter
- ¼ cup honey
- 3 Tbsp coconut oil
- ¼ cup (45g) whole raw peanuts
- Preheat oven to 180 degrees Celsius.
- Melt honey and coconut oil together in the microwave or in a small saucepan until runny then stir in the peanut butter. .
- Mush all the bananas with a fork.
- Add oats, banana, wet ingredients and mix together well.
- Line a square 20cm baking tin with baking paper.
- Press mixture into the lined tin and bake in the oven for 20 minutes until cooked through and golden.
- Cool, cut into squares or bars and store in an airtight container.
- Use within one week of baking.
